Pullman, Washington — Wheat Town That Solved Exploding Cheese

Pullman began as Three Forks, a small settlement in the Palouse.

Then it landed the institution that permanently rearranged the town.

Washington's new land-grant college opened here in the 1890s after local boosters offered land and support.

The modest agricultural school became Washington State University, and Pullman grew around laboratories, residence halls, stadiums and a student population large enough to change the city's rhythm every semester.

The university also produced one of Pullman's stranger exports.

Dairy researchers working on canned cheese had a problem: cultures produced carbon dioxide while aging, which is inconvenient inside sealed metal.

Researchers developed a culture that reduced the gas.

The cheese also tasted good.

Cougar Gold became a university tradition, and people now deliberately age unopened cans for years.

Pullman is still surrounded by wheat.

It just happens to contain a major research university that once had to teach cheese not to explode.
